What is Togishi in Japanese Katana terminology?

A "Togishi" (研師) is a craftsman who polishes blades such as swords, using over 20 different types of whetstones. The Togishi's role is to refine the shape of the blade in such a way that the blade pattern (hamon) appears vividly and beautifully. The artistic value of the blade is preserved through the polishing work of the Togishi.
